Purple Cabbage and Blueberry Refresher

  • 2 cups finely chopped purple cabbage
  • 1½ cups fresh blueberries
  • 4 cups cold water
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons honey or maple syrup
  • 8-10 fresh mint leaves
  • 1 cup ice cubes
  • ½ teaspoon grated fresh ginger (optional)
  • Lemon slices for garnish
  • Extra blueberries for garnish
  • Mint sprigs for serving

    Instructions

    Step 1

    Wash the purple cabbage thoroughly and chop it into small pieces. Rinse the blueberries under cold water and drain well.

    Step 2

    Bring two cups of water to a gentle boil in a medium saucepan. Add the chopped purple cabbage and simmer for about 5 minutes until the water turns a deep purple color.

    Step 3

    Remove the saucepan from the heat and allow the cabbage mixture to cool for 10 minutes.

    Step 4

    Strain the liquid through a fine mesh sieve into a large pitcher. Discard the cooked cabbage or save it for another recipe.

    Step 5

    Place the blueberries, remaining two cups of cold water, lemon juice, honey, and ginger (if using) into a blender.

    Blend on high speed until completely smooth.

    Pour the blueberry mixture through a fine strainer into the pitcher containing the purple cabbage liquid.
